Our summer recipe series continues, this week with seafood.

ImageThink’s Heather Willems created this beautiful rendering of Mario Batali’s calamari in zimino recipe at last year’s Aspen Food & Wine Classic. “In zimino” is an Italian term dating from the 12th century that means a style of preparation that uses vegetables and wine in a sauce for lean meats. Typically, “in zimino” includes tomatoes, chard or spinach. Batali’s version of calamari in zimino balances sweet, freshly shucked peas with the spice of garlic and hot chilies. Buon appetito!
